Although extensively used for stock feed, lupins remain under-utilised in potential human food applications. Various lupin products can be incorporated into a range of food products to improve their nutritional value, health benefits and consumer acceptability. Grain Foods CRC is investigating potential applications of lupins as food products utilising a systematic research approach. In response to concerns regarding lupin toxicity, Grain Foods CRC researchers have conducted a review of the current literature. The attached report takes a look at possible allergens in lupin flour and provides a better understanding of potential problems in utilising lupins for food products. |
